Do you have to fight a war to make your kid eat salad? Try this one!
Kids have the tendency to run away from veggies. Then comes our role to make the food interesting for them. This salad is loosely inspired from the one I ate last time during my stay at Mumbai. It was super yum! Although, it was served warm but since its summer you can refrigerate it to have it cold. So let’s get down to business!
Take all the veggies of your kid’s choice (suggestions-carrot, beans, capsicum, cabbage, spinach, cucumber etc)
Sesame seed or flaxseed-1 tsp
Lemon juice-1 tsp
Vinegar-1/2 tsp (optional)
Olive oil-1 tbsp
Black pepper-1/2 tsp
Optional-Mayonnaise, tomato sauce (if your kid is fond of it)
-> Cut all the veggies and parboil them one by one in salted water (except cucumber, of course!). You can even steam them.
-> Strain it and dip in cold water to retain its colour and strain again (don’t throw that veg. stock, use it in other preparation; it is full of nutrients).
-> Boil pasta in salted water, strain and run through cold water.
-> In a bowl take olive oil. Add sesame seeds or flaxseed seeds (full of omega 3), salt, black pepper, lemon juice & vinegar. Mix them well.
-> Now add the veggies and pasta in it and toss well.
-> If your kid is fond of mayonnaise or tomato sauce you can add that too. I am skipping it.
Refrigerate it and serve it chilled. Even you can enjoy this salad 😉
P.S: Don’t serve it cold if you kid is sensitive to cold.
