Mixed veg. in tomato-spinach gravy!

A healthy yet tasty curry.. 🙂

Ingredients:

Mixed veg (parboiled in salted water or steamed)-4 cups
Blanched & pureed spinach-1 cup
Onion paste-1 ½ cups
Tomato puree-3/4 cups
Ginger paste-1/4 tsp
Garlic paste-1 tsp
Green chilli paste-1/4 tsp (or according to your liking)
Turmeric powder-1/4 tsp
Coriander powder-1 tbsp
Black pepper powder-1/4 tsp
Cumin powder-1/4 tsp
Cumin seeds-1/4 tsp
Garam masala-1/4 tsp
Water/veg stock-1 cup
Salt-to taste
Oil-2 tbsp
Cream-1 tbsp

Method:

-> Heat oil in a wok and add cumin seed.
-> When the cumin seed crackles, add ginger-garlic paste.
-> Cook till light brown. Now add onion paste.
-> Fry till golden brown.
-> Now add all the dry spices (except garam masala) and let it cook for a while.
-> Then add chilli paste and tomato puree. Add salt.
-> Mix well and cook till it leaves oil.
-> Now add all the vegetables, spinach puree and garam masala.
-> Cook for another 2 minutes
-> Add 1 cup water or the vegetable stock you have got by boiling the vegetables.
-> Give it a boil and then turn off the stove.

Garnish with cream and serve hot 🙂
