Spicy Vermicelli

A healthy breakfast option!

Ingredients:

Vermicelli-2 cups
Onion- ½ cup (chopped)
Garlic-1 tsp (chopped)
Green chilli- ½ tsp (chopped)
Cumin seeds (jeera)- 1/4 tsp
Turmeric powder-1/4 tsp
Coriander powder-1 tbsp
Tomato-¼ cup (chopped)
Capsicum-¼ cup (chopped)
Salt-to taste
Oil-1/2-1 tbsp
Lemon juice-1/2 tsp

Method:

-> Roast the vermicelli till golden brown without oil. Keep aside.
-> Now heat up oil in a wok or skillet.
-> Add cumin seeds. When it starts crackling, add chilli.
-> Now add onion and fry.
-> Now add garlic and fry till its raw smell fades.
-> Add capsicum.
-> Add turmeric powder, coriander powder and salt. Cook for 1-2 minutes and then add tomato to it.
-> When the spices are cooked properly and leave oil, add the roasted vermicelli.
-> Add water (covering the vermicelli).
-> When the vermicelli is cooked. Add lemon juice to it.
-> Give it a nice mix and turn off the stove.

All ready to be served as a breakfast or as an evening snacks.

Note: You can add as many vegetables as possible to make it even more healthy :)
